I don’t know about you but one of the things that gives me special satisfaction is preparing a meal for my family. The act is particularly rewarding when I get an idea to make something with ingredients on hand and find that I have everything I’d need or want to make the meal.
Yesterday I sauteed some spinach in garlic and oil and added leftover oven roasted potatoes that I cut into smaller pieces. Once the potatoes were heated through I added beaten eggs and Swiss cheese to make a yummy dinner frittata. I served this dish with Grands! refrigerated biscuits from Pillsbury and every morsel got eaten….that’s the cherry on top–when no scraps remain!
A very satisfying endeavor….and next time I will be sauteing onion with that spinach and potato mixture and maybe adding mushrooms and extra garlic!!
